When Dave Smith and his team took over the hotel it was one of the poorest performing hotels in Moffat. From the beginning he instilled a commitment to quality in all aspects of running the hotel, including the skills and service of his staff, a service that 'goes that extra mile' and an ethos for the food it served which embraced the tenents of food tourism.

This was encompassed in a buying policy which is strictly adhered to; in order of priority:

1. Absolute Quality – No Compromise
2. Consistency of Standard, Presentation & Supply
3. Regional Origin, Moffat, Annandale, Dumfries & Galloway
4. National – Scotland
5. To work with our suppliers in all matters of quality and consistency including our commitment to the environment and green tourism.
6. Speciality imports (not available in Scotland)

The Buccleuch Arms Hotel MoffatDave recognises how fortunate they are to have so many suppliers that fit into their No 1 & 2 policies, providing food products of the highest standing and quality all of the time. Dave believes that Scotland is blessed with many world class producers who are as passionate about quality food as he is.

He is so proud of his food suppliers that he has generated details of them in a small 'product trail' guide.He beleives  it is important to provide his guests with information about some of his key food suppliers, suppliers he thinks would meet the criteria of the most discerning kitchens – Anywhere!

The hotel is now regarded as one of the most successful in the area and regularly has diners travelling from the Central belt to enjoy the food of the hotel.
