“I thought I knew what top class ingredients tasted like until I came to Scotland. I was blown away – and still am constantly overwhelmed by the quality of produce here”.

Former Philadelphia food writer Jim and New Orleans-trained chef Anne found Fortrose “by accident” 4 years ago and took over a small rather neglected hotel, now called The Anderson. Their business success is based on their approach to food and drink. Winners of numerous awards, including Inverness District Pub of the Year 2007 and star-rated in the top ten best for both beer and food by CAMRA, the Andersons offer a vast selection of malts and Belgian beers, plus real ales and ciders.

A menu of “global cuisine” is changed daily and is based on international and novel interpretations of local ingredients, sometimes using cuts of meat or combinations of produce which are unfamiliar to their local clientele who nevertheless have become more adventurous. Regular customers also appreciate the freshness of the food and the value for money.

All dishes are fully described on the menu, partly for customers’ information and partly to relieve staff of having to learn from scratch each day. The drinks menus are written with similarly comprehensive tasting notes.

Unusually, the Andersons say that they are not customer-driven. Instead, they value the freedom to create what they want and to satisfy their own standards first and foremost. Their growing customer base and collection of awards are testament to the success of their philosophy.
