Borough Hotel, Edinburgh

Food is Big at the boutique Borough Hotel. Situated near The Meadows, just 15 minutes’ walk from the bustle of Princes Street, the Borough is very popular with locals and tourists alike.

Chef Paul Mundy is passionate about fresh food. When he started at the Borough five years ago, he changed the menus completely to focus on freshly cooked dishes made with produce sourced as locally as possible. Since then, food turnover has increased by £5000 per week, with 90% of that from bar meals. As the most expensive bar meal is £13, that equals a lot of meals!

Gross profit has soared too because Paul tries to deal directly with producers, butchers and fishmongers, which keeps his costs down and allows him to pass the savings to his customers. His customers eat at the Borough regularly as it is affordable, great value for money and they feel known and appreciated.

Because the food is cooked simply to make the most of the quality produce, Paul manages this busy kitchen with a team of just three, offering meals all day. The only frozen product on his menu is ice cream!

The Borough has a very high level of repeat business. Paul feels that one of the reasons for their success is that he talks to the customers and encourages them to try new foods such as wild ceps, or different fish or game sourced freshly that day. This keeps the locals coming back – there’s always something new, but they can also rely on finding their old favourites like fresh haddock and chips or the 100% Buccleuch beef burger!
